The summer is my favourite time of year for many reasons, including all the local fruits and vegetables that are available. Take advantage of the season with this simple and fresh salad recipe.
Baby Kale and Local Berry Salad:
5 cups baby kale (I used the Local Garden baby kale)
2 cups of your favourite local organic berries
1 cup walnuts, chopped
Gently toss and set aside in large salad bowl.
1/2 cup extra virgin olive oil
1/4 cup maple syrup
1/4 cup balsamic vinegar
Whisk ingredients together, adjusting the amounts until you find the balance of sweet and sour that you prefer. Drizzle over salad and enjoy!
