Kale Caesar Salad

Salad:
2 cups kale, cut into bite size pieces and wilted (i.e. massaged)
2 cups romaine, cut into bite size pieces
3/4 cup red pepper, diced
Garnish: 3/4 cup alfalfa sprouts 

Place romaine, kale, and red pepper in large salad bowl. Save alfalfa sprouts for garnish.




​Dressing:

1 cup macadamia nuts or cashews 
1 tbsp fresh garlic, minced (or 2 tsp garlic powder)
2 tbsp lemon juice
1/4 cup olive oil
1-2 tsp nori (or wakame or dulse)
1/2 tsp sea salt
1/2 tsp black pepper
1/4 cup water 
​

Blend until smooth. Adjust water to preferred consistency. Stir into salad until evenly mixed. ​
